I'm a busy man, I don't have time to separate my free-range, organic araucana eggs for homemade mayonnaise. In the cut and thrust world I live in I barely have time to put clothes on before I leave the house and take the children to school.*Why not just buy a jar of mayonnaise I hear you ask? To be honest, it's been a quiet couple of weeks here, so I blatantly have more time usual, hence the fresh bread issuing forth from the oven and the children eating proper food on the weekends and after school.The reason I didn't separate the eggs was to see what whole egg mayonnaise was like. And it's pretty good, hardly different to the usual method. It's just a little more liquid to begin with so emulsifying the oil takes a little more time, but in a food processor it's easy. And it tastes so much better than a middle-class posh jar with French words and has the added benefit of having no stuff in it for a year on the shop shelf.I found the remains of some wild garlic, flowers and all, in a still fairly good state in a bag in the fridge. They were starting to become slightly frilly and not quite as fresh as when I picked them. They were certainly good enough, however, for a pesto, sauce or in this case accompaniment to plump and juicy prawns on hot toasted sourdough. If I'm lucky, there may still be some lurking in the garden for the risotto I'd originally planned, but for now, this is a delicious use for them.As far as the monk's beard goes, the season for that is even shorter. If you've missed it, although I suspect it's still available (Natoora and Ocado stock it), samphire works perfectly in it's place. And failing that, some tender British asparagus tips, halved lengthways and lightly steamed will also work.*I do get dressed. And it's mainly because the alarm is such shock to the system I snooze it until the last minute. I'm not a morning person. Getting up earlier is not an option with my lack of discipline.Ingredients, lunch for two8 large tiger prawns, shell and head on2 free-range organic eggs1tbsp Dijon mustardA pinch of saltRapeseed oilA tablespoon or two of olive oil to finishA splash of water to loosenA small bunch of wild garlic, flowers too if you have any (they're peppery)A small bunch of monk's beard or a couple of handfuls of samphireJuice and zest of half a lemonSourdough bread to toastMethodMake the mayonnaise. You can do this in the mini bowl of the food processor or by hand with a whisk.Stir the mustard and a pinch of salt into the eggs. With the motor or your whisk hand running, pour in the rapeseed oil at first slowly drop by drop until it starts to thicken and emulsify. You can then speed up the pour, spinning all the time until thick and 'mayonnaise-y'. Now continue with the olive oil. Add a splash of water to loosen a little. If you're doing this in the processor, throw in the garlic now and blitz until completely shredded to pieces in the mayo. If doing it by hand, slice, slice and slice again then chop. Now stir it in well. This keeps in the fridge for a few days in a sealed jar so make it ahead if you fancy.Sauté the prawns with the shell on in some olive oil and chopped garlic until cooked, then remove from the pan and leave to cool a little.Remove the tough stalks from the monk's beard. These make good, if temporary weaponsQuickly sauté the leaves in the pan the prawns were cooked in and add the lemon juice and a pinch of salt at the end.Toast the bread, dollop a spoon of mayonnaise on top and spread it around.I shelled the prawns over the toast and mayo, squeezing the heads as I did so to get more of the juices out, giving it an even bigger punch of flavour.A sprinkle of salt and pepper, the still warm monk's beard leaves and perhaps a few chilli flakes and lunch is ready.

Garlic, chive and thyme aioli
If you fancy something to dip your chips in, an alternative to mayo in your chicken sandwich or something to fire up your fish, this is a perfect quick sauce to scare the people near your face. Unless they're eating it too.Obviously the amount of garlic you put in is up to you, I like mine to be fiery and to give you the feeling your blood is thinning as you go near it. This keeps in the fridge for two to three days if well covered. I've been known to have a surreptitious spoonful when no-one's looking. You'll get found out though.Ingredients2 egg yolks1 large clove of garlic, finely minced.1tbsp Dijon mustard1tbsp chopped chives1tsp chopped fresh thyme150ml olive oilLemon juice or sherry vinegar to tasteA pinch of saltMethodWhisk together the egg yolks, mustard and a pinch of salt. Slowly whisk in the oil, at first drop by drop (you can speed up when it starts to emulsify) until you have a thick emulsion. Add the garlic and herbs, stir in the lemon juice or vinegar to taste and adjust the seasoning. Use straight away or cover well and keep in the fridge for up to three days.
Taco Chance on Me
We've recently started taco evenings with the children and they've been a roaring success. I suppose it's the spread of food in front of them and the feeling of building your own meal that appeals to them. We're sharing everything together and I think it means they feel quite grown up and part of the fun.Usually, I'll just make a chicken dish seasoned with cumin, oregano, chilli and other bits and pieces (we call it taco seasoning, it could be called adobo spices), but this time I got the heavy guns out and went a bit nuts. There was plenty left over which went in freezer bags for next time, so it wasn't as crazy as it looked when I lay it all down. I'd suggest picking one or two dishes depending on how many people you're feeding and depending on how long you want to spend in the kitchen. I was in a food frenzy, you may not want to be.Whatever you do, you must serve the tacos with guacamole, sour cream, chopped tomatoes and grated cheddar.The dishes we had are as follows (deep breath):Homemade corn tortillas, guacamole, pico de gallo, adobo sauce, chicken with taco seasoning, red onion pickle, sour cream, slow cooked shredded pork cheek with barbecue sauce, fried prawns with Old Bay seasoning, lime and coriander mayonnaise, shredded gem lettuce,spring onions, coriander leaves and lime wedges.All this for an early evening supper with the kids. Totally bonkers and never again on such a scale, unless someone pays me.The children loved making the tortillas though, and if you don't have a tortilla press (they're cheap and available on mexgrocer.co.uk along with almost everything you may need for mexican receipes) you may want to save yourself the bother and buy corn tortillas ready-made. Of course, they're not as good and often have wheat flour in but if it saves your nerves from becoming as shredded as the pork, then it's probably a good thing.The pickled red onion recipe is here, but for the rest (apart from guacamole, I'm not going to bother giving a recipe for that) hold your breath and keep reading.Corn Tortillas:One part masa harina (corn flour) to one part warm water and a pinch of salt.Simply mix the ingredients together until they form a dough much like 'playdoh', leave to rest and then form into small balls and press between sheets of plastic (I used a cut up ziplock sandwich bag) on the tortilla maker. Cook on a volcanic cast-iron griddle pan until both sides are tortilla-like then throw on a plate and continue until you have a pile of them. Cover and leave until you're ready to eat.Pico de Gallo:This is essentially a fiery tomato salsa, but here, I've left the cherry tomatoes quite large so it's a little like a salad. Just mix together a load of chopped cherry tomatoes, some finely sliced onions, a chopped serrano chilli, some fresh coriander, salt and a good squeeze of lime juice. Leave to rest for about twenty minutes before serving.Adobo Sauce:I soaked a large dried ancho and chipotle chilli in hot water for about half an hour then blended it with a thumb of ginger a tablespoon of ground cumin and a pinch of salt. That's it. It's pretty intense and sharp, but goes really well with the other dishes.Chicken with Taco Seasoning:Take one chicken breast and slice it thinly across. Toss it in a bowl with as much as you feel of paprika, pepper, onion powder, oregano, cumin, garlic powder, salt, chilli powder and ground coriander. Why don't you start with equal amounts of each, see what you like and adjust it from there. Then, as I have done, you can make a big jar of it and you've got tacos a-go-go hey presto!Sauté the chicken in a hot frying pan with some olive oil until cooked. Add a splash of water at the end to deglaze the pan and pour everything into a bowl.Shredded Pork in Barbecue Sauce:This is a slow-cooker winner. I now buy all my meat from the incredible Anne Petch at Heal Farm in Devon. It's close to the supermarket prices and miles above in quality and welfare. She sends it by courier the next day and I cannot recommend her highly enough. I discovered her in Jane Grigson's 'English Food' and was delighted to find she's online and thriving. I felt I knew the pigs I was eating, and being in London feel much more connected to the food as is possible in a city.Take one onion, two cloves of garlic and 500g of pork cheek (diced) and brown them in a pan with some olive oil. Season well and add to the slow cooker.Add one sliced green chilli and some dried thyme sprigs and turn the slow cooker onto high. If you don't have one, you could cook this in a casserole in a low oven for the same amount of time.Make the barbecue sauce by stirring together: 1tsp tomato purée, a pinch of coconut sugar (or brown if you don't have any), a good squeeze of lime juice, probably about a lime's worth, a large pinch (depending on the size of your fingers) of garlic powder, some chilli powder, Cayenne pepper, thyme leaves, dried oregano, ground cumin, finely diced onion, chipotle paste, a good splash of Worcestershire sauce, a spoonful of Dijon mustard and some tabasco sauce. As for exact amounts, just trust your nose and instincts. I make mine with varying pinch sizes every time and it's always delicious.Add the barbecue sauce to the pork cheeks, stir well and cook with the lid on on high for four hours. Cool a little and shred with a pork. Pour into a bowl to serve. This one's a winner the next day in a sandwich too.Fried Prawns with Old Bay Seasoning:Or shrimp, as the Americans would have it, is a version of the famous fish taco. You can buy Old Bay here and I'd recommend a box for the packaging alone. I made a quick batter with flour, sparkling water and a good few spoons of Old Bay then deep-fried them until crisp. Easy as that.Lime and Coriander Mayonnaise:Make some mayonnaise and stir in some lime juice, lime zest, pepper and chopped coriander. What else do you want to know?And that's pretty much all you need for a taco party. Just make sure you're wearing elasticated trousers and have no plans for the evening. Even if you're having these at lunchtime.
Claws is Coming to Town
My freezer is sometimes an Aladdin's cave, sometimes a forgotten morgue. I've found pigs trotters, prawn and lobster shells, strange soups and chicken bones bagged and labeled under Thai broths, strange soup experiments and well intentioned litre upon litre of stock.
While it's great for fish fingers and other things for the children, I really need to be better at keeping it organised. I need a chest freezer in the shed for the bodies more experimental stuff that I will use, just not on a daily, home basis.On one of the semi-regular inventories, I found a bag of crab claws, cooked and still with the tip attached. While nowhere near fresh crab, it's still a good back up for a quick snack.Defrosted, pepped up a little with spice, topped with the crunch of hazelnut, the fresh mineral zing of spinach and dipped in this lemony piquante mayonnaise, it made a great surprise lunch. Not that lunch was a surprise, it usually happens, more that is was better than the limp lettuce I had in the salad drawer. And that's another story...Ingredients:A load of cooked crab claws, frozen or fresh1tbsp Cayenne pepper1tsp chilli flakesA handful of chopped baby spinach leavesA handful of chopped hazelnutsSalt and pepperMayonnaise made in the usual way but with:1tbsp ground fenugreek1tbsp lemon juice2tbsp olive oil1tbsp Dijon mustardMethod:Make the mayonnaise, stirring in the extra ingredients and tasting to check the seasoning.Put the crab claws in a bowl and toss around in the spices, spinach and nuts. Season well.Serve the crab with the mayonnaise and some ice cold ginger beer.
Hasselback Jersey Royals with Gribiche Sauce
When I think of Jersey, instead of potatoes and cream, I think of Bergerac and John Nettles. And Hasselback obviously sounds like Hasselhoff, so this recipe should be extraordinarily good at fighting crime.A good Maris Piper potato salad, dressed lightly with mayonnaise and chives, or new potatoes gently robed with a zingy vinaigrette always sit well on the summer table. Warm Anyas, butter melting and pooling around and tossed through with parsley, salt and pepper as well is a perfect side-dish with a barbecued and charred rib-eye steak or some grilled sea bass with a herby oil.This potato salad has the crisp salty crunch of delicious jacket potaoes. The ridges absorb all the flavours and juices. Let it sit a while before dressing so it cools down.The gribiche sauce is a classic normally served with veal's head. It's a kind of cross between egg mayo and tartar sauce. While that may not sound instantly appealing to some, it really is delicious and gives this dish a little twist.So the only crime worth fighting here is probably going to be the British summer. Oh well, maybe I'll have a Magnum anyway.Ingredients500g Jersey RoyalsOlive oilSalt to seasonFor the gribiche:2 egg yolksSalt to season2 cooled hard-boiled eggs (about eight minutes)5 cornichons1tbsp capers1 small shallot2tsp Dijon mustard1 small red chilli (optional)Olive oilRapeseed oilSome parsleyMethodHeat the oven to 180c.Score the tops of the potatoes all the way across the top a millimetre apart slicing down just a little so they look stripy.Put them on an oven tray and roll them about in olive oil and salt then roast for 45 minutes.While the potatoes are cooking, make the gribiche.Whisk the egg yolks, mustard, hard boiled egg yolks (keeping the cooked whites aside) and some salt together in a bowl then gently drizzle in the olive oil, drip by drip at first, whisking all the while until it starts to form a thick emulsion. If you have a mini food processor, by all means use it for this stage.Now switch to the rapeseed oil and continue until you have a nice pot of mayonnaise. Thin it down with a little water or lemon juice if you like.Finely chop the parsley, shallots, cornichons and chilli then lightly run your knife through the capers and dice the cooked egg whites.Add all of this to the mayonnaise then mix well. Taste and season more if you like.Let the potatoes cool just a little then stir through the sauce and serve.
